Elevate children's dinner with creamy mac 'n' cheese in individual portions.
Ingredients:
  • 750.00 ml dried wagon wheel pasta
  • 125.00 ml frozen peas
  • 1 small bunch broccolini, cut into 2cm lengths
  • 25g butter, chopped
  • 1 small brown onion, finely chopped
  • 515.00 gm milk, warmed
  • 425g can tuna in springwater, drained, flaked
  • 21.00 gm lemon juice
  • 60g baby spinach
  • 250.00 ml grated tasty cheese
Instructions:
  • Boil pasta in salted water as per packet instructions, adding peas and broccolini for the last 2 minutes. Drain and return everything to the pan.
  • In a saucepan over medium heat, melt butter and sauté onion until softened. Add flour and cook until mixture bubbles. Gradually stir in milk, bring to a boil, then reduce heat and cook until thickened.
  • Combine tuna, fresh lemon juice, spinach, and 1/2 cup of cheese, stirring well. Cook on medium heat for 2 minutes or until heated through. Mix tuna blend into the pasta, and season generously with salt and pepper. Stir thoroughly to ensure all flavors are evenly blended.
  • Preheat the grill on high. Grease four 1 1/2-cup-capacity ovenproof dishes and place them on a large baking tray. Spoon the pasta mixture into the dishes and sprinkle with the remaining cheese. Grill for 2 to 3 minutes until the cheese is melted and golden. Serve.
