Kid-friendly tuna and sweet potato fish balls for a fun and delicious meal.
Ingredients:
  • 1 medium (about 300g) orange sweet potato (kumara), peeled, coarsely chopped
  • 1 x 425g can tuna chunks in brine, drained
  • 2 eggs, lightly whisked
  • 25g (1/4 cup) dried (packaged) breadcrumbs
  • Salt flakes and freshly ground black pepper, to season
  • 4 crusty bread rolls
Instructions:
  • Boil the sweet potato in a large saucepan with salted water for 7-8 minutes until tender. Drain, cool under cold running water, and transfer to a large bowl.
  • Mash the sweet potato until coarsely mashed using a potato masher or fork. Combine the mashed sweet potato with tuna, egg, breadcrumbs, and pepper. Shape the mixture into 8 equal 8cm patties using wet hands.
  • In a large non-stick frying pan over medium-high heat, fry the patties for 3-4 minutes on each side until they turn golden brown. Remove from the heat, plate them, season with salt and pepper, and serve with bread rolls while hot.
