Ingredients:
  • 13.80 gm olive oil
  • 2 cobs polka dot corn, corn cut off the cob
  • 2 zucchini, chopped
  • 1 red capsicum, deseeded, chopped
  • 350g dried wholemeal spiral pasta
  • 425g can tuna in springwater, drained, broken into large flakes
  • 62.50 ml chopped fresh parsley
  • 1/2 lemon, juiced
  • Freshly ground pepper
Instructions:
  • In a large non-stick frying pan over medium heat, heat the oil until shimmering. Add the onion, corn, zucchini, and capsicum, and cook, stirring occasionally, until the vegetables are tender, about 10-12 minutes.
  • While the pasta is cooking in a large saucepan of boiling water according to package directions, cook until al dente. Afterward, drain well, saving 1/3 cup (80ml) of the cooking liquid.
  • Combine the vegetables, cooking liquid, tuna, parsley, and lemon juice with the pasta. Toss thoroughly to mix. Season with pepper and serve promptly.
