Tuna croquettes

Ingredients:
  • 850g desiree, spunta or golden delight potatoes, peeled, chopped
  • 41.20 gm warmed milk
  • 2 garlic cloves, chopped
  • 2.50 gm sweet paprika
  • 425g can tuna in brine, drained
  • 40.00 ml flat-leaf parsley leaves, finely chopped
  • 2 eggs, lightly beaten
  • 187.50 ml dried breadcrumbs
  • extra-light olive oil, for shallow frying
  • rocket leaves, to serve
Instructions:
  • In a saucepan, cover potatoes with cold water and bring to a boil over medium heat. Simmer gently for 15 to 20 minutes until tender, then drain. Return to the saucepan, add milk, and mash until smooth. Transfer to a bowl.
  • In a small non-stick pan over medium heat, sauté onions until soft, then stir in garlic and paprika for an extra minute. Combine this flavorful mixture with tuna, parsley, and potatoes, mixing until well combined.
  • Prepare two shallow dishes: one with beaten egg and another with breadcrumbs. Take 1/4 cup of the mixture and shape it into small sausage shapes. Dredge each croquette first in the egg, then coat with breadcrumbs.
  • Fill a frying pan with oil so it's one-third full and heat over medium heat. Cook croquettes in batches, flipping occasionally, for 3 to 4 minutes until golden. Serve with rocket leaves.
