Tuna nicoise wraps

Delicious and healthy tuna nicoise wraps - a flavorful low GI option!
Ingredients:
  • 2 oat mountain bread wraps (see note)
  • 25g baby spinach
  • 185g can tuna in springwater, drained, flaked
  • 2 hard-boiled eggs, peeled, halved, sliced
  • 6 cherry tomatoes, quartered
  • 40.00 ml pitted green olives, thinly sliced
Instructions:
  • Lay one wrap flat on the counter. Add a generous amount of spinach down the center. Layer on half of the tuna, egg, tomato, and olives. Roll it up tightly to seal in the delicious filling. Repeat the process with the second wrap. Serve and enjoy!
