Try this delicious, healthy tuna nicoise sandwich for your next picnic!
Ingredients:
  • 4 eggs, at room temperature
  • 425g can tuna in olive oil, drained, flaked into large chunks
  • 87.45 gm creamy roasted garlic dressing
  • 8 thick slices kalamata olive sourdough bread
  • 1 Lebanese cucumber, sliced diagonally
  • 2 medium tomatoes, sliced
Instructions:
  • In a medium saucepan, gently lower the eggs and cover them with cold water. Bring to a boil over high heat, occasionally stirring to keep the yolks centered. Reduce heat to medium and simmer for 5 minutes for a medium boiled egg. Drain the eggs and run them under cold water to cool them down. Peel and slice the eggs thickly.
  • Combine tuna and dressing in a bowl, handling gently. Lay out 4 slices of bread. Layer cucumber, tomato, tuna mixture, and egg. Cover with remaining bread slices to make sandwiches. Cut in half and enjoy!
