Tuna Noodle Casserole from Scratch

Indulge in a creamy, cheesy tuna noodle dish with homemade mushroom sauce and irresistible potato chip topping.
Ingredients:
  • 4 tablespoons unsalted butter
  • 8 ounces (about 2 cups) sliced white mushrooms
  • 1/4 cup all-purpose flour
  • 3 cups milk, preferably whole
  • 1 teaspoon kosher salt, plus more for pasta
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 7 ounces (3 cups) grated cheddar cheese, divided
  • 12 ounces egg noodles
  • 4 (5 ounce) cans chunk light tuna, drained
  • 3 cups coarsely crushed wavy potato chips
Instructions:
  • Preheat the oven to 400°F, position a rack in the center, and grease a 9- x 13-inch (3 quart) baking dish.
  • In a medium saucepan over medium-high heat, melt the butter and sauté the mushrooms until they release their liquid and soften, stirring frequently for 3-5 minutes.
  • Create the mushroom sauce by combining flour to form a thick paste, cooking for 30 seconds. Slowly whisk in the milk, 1 cup at a time, then add salt, pepper, and onion powder. Bring to a boil, stir and cook until slightly thickened, about 5 minutes (the consistency should be thinner than canned condensed soup). Mix in half of the cheese until melted and remove from heat.
  • While the pasta is cooking, boil generously salted water in a large pot over high heat. Add the pasta and stir. Reduce the heat to keep the water boiling steadily. Cook the pasta, stirring occasionally, until al dente. Cooking times may vary, so start checking after 3 minutes, but usually takes 5-8 minutes. Drain the pasta and return it to the pot.
  • Create layers of flavor by covering the noodles with the delicious mushroom sauce, gently mixing in the tuna and breaking it up into bite-size pieces. Transfer the mixture to the dish, sprinkle with the remaining cheese, and crown it with the irresistible topping of chips for the perfect finishing touch.
  • Once the casserole is baked until the chips are lightly browned and the cheese is melted, approximately 20 minutes, allow it to rest for 5 minutes before serving. For leftovers, store the tuna noodle casserole covered in the fridge for up to 3 days.
