Vibrant veggie and protein salad with pasta and potatoes, perfect for a balanced and colorful meal.
Ingredients:
  • 2 cups uncooked small pasta shells (7 oz)
  • 4 small red potatoes, cut in half, sliced
  • 2 cups frozen cut green beans (from 1-lb bag)
  • 1 tablespoon olive or vegetable oil
  • 1 can (6 oz) tuna in water, drained, flaked
  • 1 medium tomato, seeded, chopped (about 3/4 cup)
  • 1/2 cup sliced green onions (8 medium)
  • 1/2 cup Italian dressing
  • 2 hard-cooked eggs, sliced
Instructions:
  • Cook pasta according to package instructions in a 4-quart saucepan, then add potatoes and frozen green beans for the last 5 to 7 minutes until all ingredients are tender. Drain well.
  • Combine the cooked pasta, potatoes, and green beans in a large bowl and delicately mix with oil. Chill in the refrigerator for about 1 hour and 30 minutes before serving.
  • Combine the tuna, tomato, and onions in a bowl. Drizzle the dressing over the salad and gently mix to coat everything evenly. Finish by garnishing with sliced hard-cooked eggs.
