Tunisian-inspired pasta dish with spicy harissa enhancing sweet prawns - a flavorful delight!
Ingredients:
  • 150 g dried spaghetti
  • 8 large raw shell-on king prawns from sustainable sources
  • 2 teaspoons rose harissa
  • ½ a bunch of flat-leaf parsley (15g)
  • 1 lemon
Instructions:
  • Boil the pasta in salted water as per package instructions. Peel and devein the prawns, leaving tails on. Butterfly by making a slit along the back with a knife. Marinate prawns with harissa. Sauté prawn heads in olive oil until golden, crush gently for flavor. Chop parsley leaves, slice stalks, and add to pan with salt and pepper. Cook for 1 minute. Add marinated prawns, cook for 1 minute on each side. Mix in cooked pasta, lemon juice, parsley leaves, and a bit of pasta water. Discard crispy prawn heads. Serve with lemon wedges.
