Ingredients:
  • 20.00 gm butter
  • 18.20 gm olive oil
  • 2 large red onions, halved, thinly sliced
  • 16.00 gm brown sugar
  • 60g baby spinach leaves, shredded
  • 250g (2 cups) roast turkey, chopped
  • 125.00 ml freshly grated parmesan cheese
  • 6 eggs
  • 128.75 gm milk
  • garden salad, to serve
Instructions:
  • In a frying pan over medium heat, melt butter and add oil, onions, and sugar. Sauté, stirring occasionally, for 15 to 20 minutes until onions are soft and golden.
  • Preheat your oven to 180°C and lightly grease a muffin pan with 1/3-cup capacity.
  • In a bowl, combine half of the caramelised onions with spinach, turkey, and parmesan. Mix thoroughly. Distribute the turkey mixture evenly among muffin holes. In a jug, whisk together eggs, milk, salt, and pepper. Gently pour the egg mixture over the turkey mixture in each muffin hole, filling them three-quarters full.
  • Bake for 20 minutes, or until frittatas are golden and puffed. Serve alongside the remaining onions and a fresh garden salad.
