Turkey Meatball Tacos

Upgrade your taco game with Freezer-Friendly Turkey Meatball Stuffed Tacos!
Ingredients:
  • 1/2 lb frozen turkey meatballs (8 meatballs)
  • 1 tablespoon olive oil
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon ground coriander
  • 4 taco shells from 1 box (4.7 oz) Old El Paso™ Stand 'n Stuff Taco Shells (10 Count)
  • 1 cup shredded lettuce
  • 12 very thin slices jalapeño chiles
  • 1/4 cup salsa
  • 1/2 avocado, diced
  • 1/4 cup queso fresco cheese (1 oz)
  • 1/4 cup chopped fresh cilantro
Instructions:
  • Preheat oven to 400°F. Place a rack on a lined cookie sheet and coat with cooking spray.
  • Place frozen meatballs in a resealable food-storage plastic bag along with olive oil, cumin, and coriander. Seal the bag and toss to coat the meatballs. Arrange the meatballs on half of a baking rack and bake for 30 minutes.
  • Place the taco shells on the other half of the rack with the meatballs and bake for about 3 more minutes, or until a meatball reaches 165°F when tested with an instant-read thermometer.
  • Arrange the lettuce evenly in taco shells. Cut the meatballs in half and place 4 halves in each shell. Finish by topping them with chiles, salsa, avocado, cheese, and cilantro.
