Elevate comfort food with wholesome bulgur in this family favorite sandwich!
Ingredients:
  • 2/3 cup hot water
  • 1/2 cup uncooked bulgur
  • 1 package (20 oz) lean ground turkey
  • 2 cloves garlic, finely chopped
  • 1/2 cup onion, finely chopped
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon ground pepper
  • 1 whole egg
  • 1 egg white
  • 1 jar (25.5 oz) Muir Glen™ organic cabernet marinara pasta sauce
  • 8 soft hoagie buns (about 6 inches long)
  • 8 slices reduced-fat mozzarella cheese
  • Shredded fresh basil leaves, if desired
Instructions:
  • Combine hot water and bulgur in a small bowl and allow to soak for at least 20 minutes. Preheat the oven to 350°F and line a baking sheet with foil.
  • In a large bowl, combine the rest of the Meatball ingredients. Drain the bulgur and add it to the bowl, mix thoroughly until well combined. Shape the mixture into 24 golf ball-sized meatballs and place them on a wire cooling rack set inside a lined cookie sheet.
  • Bake for 25 minutes. Heat marinara sauce in a 10- to 12-inch straight-sided skillet over medium heat. Gently place meatballs in the skillet and simmer for 5 to 10 minutes until heated through.
  • Place three savory meatballs nestled in each soft, fluffy bun. Slice the cheese in half and lay it gently over the meatballs. Drizzle with more delicious sauce and garnish with a sprinkle of fragrant shredded fresh basil before serving.
