Indulge in a comforting turkey noodle casserole with Gruyere-mustard sauce - a delightful twist on leftover turkey.
Ingredients:
  • 12 oz egg noodles
  • 1/4 cup unsalted butter
  • 2 cups sliced shallots or thinly sliced onions
  • 2 cups diced celery
  • 1/4 cup all-purpose flour
  • 1/3 cup dry vermouth or dry white wine
  • 1 1/2 cups of milk
  • 1/4 cup cream or sour cream
  • 2 cups chicken or turkey stock
  • 2 teaspoons dry tarragon
  • 2 tablespoons whole grain mustard
  • 3 cups coarsely chopped cooked turkey
  • 6 ounces grated Gruyere cheese
  • Salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons lemon juice
  • 1/2 cup panko bread crumbs
  • 1 tablespoon melted butter
  • Freshly chopped parsley for garnish (optional)
Instructions:
  • Preheat the oven to 375°F and bring 4 quarts of water to a boil for the pasta, seasoning it with 2 tablespoons of salt.
  • In a large, thick-bottomed pot over medium heat, melt butter. Add shallots and celery, cook until softened (about 5 minutes). Stir in flour and cook over low heat for another 3 minutes, stirring constantly.
  • Cook the noodles al dente plus 2 minutes: Boil the noodles, following package instructions but cooking for 2 minutes less than the suggested range for a slightly firmer texture. For instance, if the package says 6 to 10 minutes, cook for 4 minutes. Proceed with the recipe while the noodles are cooking.
  • In a saucepan, combine butter, shallots, celery, and flour. Pour in dry vermouth and simmer for a minute. Add milk, cream, stock, and tarragon. Simmer on medium-low heat, stirring often, for 5 to 8 minutes.
  • After the sauce is prepared, drain the pasta and rinse it with cold water to halt the cooking process.
  • Combine the grated cheese and mustard in the pot, stirring until the cheese is melted. Add the chopped cooked turkey, salt to taste, and freshly ground black pepper.
  • Combine the cooked pasta with turkey, stir in lemon juice and seasonings. Transfer the mixture to a buttered 3-quart casserole dish.
  • Sprinkle panko over the top and drizzle with 1 tablespoon of melted butter.
  • Bake until golden: Cook the casserole in the oven at 375°F for 30 to 40 minutes until bubbly with a golden top. Let it cool briefly before serving. Optional: Sprinkle with chopped parsley for garnish. If you enjoyed the dish, please leave a rating and comment!
