Turkey, tomatoes, olives, beans, onions, and spices create a Cuban twist on Sloppy Joes. Serve on whole wheat buns.
Ingredients:
  • 1 tablespoon olive oil
  • 1.5 teaspoons olive oil
  • 1 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 0.5 cup white wine
  • 1 (8 ounce) can tomato sauce
  • 0.33333334326744 cup chopped green olives
  • 0.33333334326744 cup raisins
  • 0.5 cup canned black beans
  • 1 tablespoon olive brine
  • 1 tablespoon capers
  • 2 teaspoons cayenne pepper, or to taste
  • 2 teaspoons ground cumin
Instructions:
  • In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the ground turkey and cook until crumbly, evenly browned, and no longer pink. Remove the turkey and discard any excess grease after draining.
  • Heat a drizzle of olive oil in a skillet over medium heat. Sauté onions, bell pepper, garlic, and bay leaves until onions are soft, about 5 minutes. Add cooked turkey, wine, tomato sauce, olives, raisins, black beans, olive brine, capers, cayenne, and cumin. Let it simmer for 15 minutes.
