Turkey Taco Salad

Hearty, low-fat turkey salad with zesty dressing of fat-free mayo, lemon juice, vinegar, and taco sauce, topped with crunchy tortilla chips.
Ingredients:
  • 1 pound extra-lean ground turkey breast
  • 1 head iceberg lettuce - rinsed, dried, and chopped
  • 6 green onions, chopped
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 2 cups shredded Cheddar cheese
  • 0.5 cup diced dill pickles
  • 0.5 cup sliced black olives
  • 2 cups fat-free mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon white wine vinegar
  • 0.75 cup taco sauce
  • 1 (14.5 ounce) package low-fat baked tortilla chips
Instructions:
  • In a large deep skillet, cook the turkey over medium high heat and season with garlic salt until fully cooked. Crumble the turkey and set aside to cool.
  • Combine the turkey, lettuce, green onions, kidney beans, cheese, pickles, and olives in a mixing bowl.
  • Combine the mayonnaise, lemon juice, vinegar, and taco sauce by whisking together.
  • Drizzle the dressing over the salad and chill. Just before serving, stir in 2 cups of crushed tortilla chips. Top with whole chips for a decorative touch and enjoy!
