Ingham proudly presents a spectacular roast turkey with sweet stuffing.
Ingredients:
  • 1 x 5kg Ingham Whole Turkey
  • 4 apples, halved lengthways
  • 18.20 gm olive oil
  • 20g butter, melted
  • Cooked vegetables of choice, to serve
  • 40g butter
  • 1 large brown onion, finely chopped
  • 4 rindless bacon rashers, finely chopped
  • 1500.00 ml fresh white breadcrumbs, (approx. 12 slices sandwich bread)
  • 250.00 ml raisins
  • 1 apple, peeled, core removed, finely diced
  • 62.50 ml sage leaves, roughly chopped
  • 1 egg, beaten
  • Salt and freshly ground black pepper
Instructions:
  • Preheat your oven to 180°C and set up a large roasting dish with a rack inside. Add ½ cup of water to the dish. Pat the turkey dry inside and out with paper towels.
  • In a large non-stick frying pan over medium heat, melt butter. Add onion and bacon, cook for 4 minutes until onion is soft. Remove from heat and let cool. In a large bowl, mix together the onion mixture with breadcrumbs, raisins, diced apple, sage, egg, salt, and pepper.
  • Stuff the turkey with the stuffing mixture in both the upper and lower cavities. Secure the legs by tying them together with kitchen twine and tuck the wings under the turkey.
  • Place the Ingham Whole Turkey on a wire rack in a large roasting pan. Follow the packet instructions to cook in a barbecue oven.
  • In a large bowl, toss apple halves with olive oil and butter until coated. Transfer to a large shallow ovenproof dish. Add apples to the barbecue for the last hour of cooking the turkey. Let the cooked turkey rest on a chopping board for 10 minutes before carving or serving on a large platter. To serve on a platter, arrange apples around the turkey and serve with your favorite vegetables.
