Cornbread rounds as a delicious twist on Mexican tacos.
Ingredients:
  • 1/2 cup milk
  • 1 1/4 cups Original Bisquick™ mix
  • 1/2 cup cornmeal
  • 1 lb lean ground turkey
  • 1 packet (1 oz) Old El Paso™ 25% Less Sodium Taco Seasoning Mix
  • 2/3 cup water
  • 1/2 cup finely shredded Mexican cheese blend (2 oz)
  • 1 cup shredded lettuce
  • 1/4 cup sour cream
  • 1/4 cup from 1 bottle (9 oz) Old El Paso™ Mild Taco Sauce
Instructions:
  • Preheat oven to 425°F and grease a cookie sheet. Combine Bisquick mix, cornmeal, and milk in a medium bowl until a soft dough forms. Divide dough into 4 portions and shape each into a 5-inch round on the prepared cookie sheet. Use Bisquick-coated fingers to create a 1/4-inch rim by pressing the edges; then, prick the bottoms with a fork.
  • Bake until beautifully golden brown, then transfer to serving plates.
  • In a large nonstick skillet, sauté the turkey over medium-high heat for 5 to 7 minutes until cooked through. Add taco seasoning mix and water, then cook uncovered for about 5 minutes until thick and bubbly. Serve the turkey mixture on baked rounds and top with cheese, lettuce, sour cream, and taco sauce.
