Turkish-style green beans in flavorful tomato sauce - perfect for any meal!
Ingredients:
  • 3 tablespoons canola or other neutral oil
  • 2 small onions, finely chopped
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon cinnamon
  • 1 teaspoon sweet paprika
  • 1/4 teaspoon Aleppo pepper flakes or any mild chili flake
  • 1 (15 ounce can) whole plum tomatoes
  • 1 teaspoon sugar
  • 1 teaspoon salt, plus more to taste
  • Black pepper, to taste
  • 1/2 cup hot water
  • 1 pound green beans, trimmed
  • Extra virgin olive oil
Instructions:
  • Caramelize the onions: Heat canola oil in a large saucepan over medium heat, then add onions. Cook, stirring occasionally, until soft and translucent, for 15-20 minutes.
  • Enhance flavors with garlic, spices, and tomatoes: Saute garlic, cumin, cinnamon, paprika, and Aleppo pepper flakes for 3 to 4 minutes. Introduce tomatoes, sugar, 1 teaspoon salt, and black pepper. Break up tomatoes gently with a wooden spoon. Pour in 1/2 cup hot water, cover, and simmer for 10 minutes.
  • Simmer the green beans in tomato sauce for 15 minutes until tender. Add more water if needed to keep the stew moist.
  • Serve perfection: Remove the beans from the heat and mix in 3 tablespoons of extra virgin olive oil. Taste to adjust the seasoning, then allow to cool for 10 minutes before serving.
