Turkish delight filo rolls

Ingredients:
  • 8 sheets filo pastry
  • 4 x 55g Turkish Delight bars, cut in half lengthways
  • 40g butter, melted, cooled
  • 125.00 gm water
  • 20.00 ml rosewater essence (optional, see note)
  • 215.00 gm caster sugar
  • 125.00 ml pistachio kernels, chopped
Instructions:
  • Preheat your oven to a toasty 200°C and prepare a baking tray by lining it with baking paper.
  • Fold the filo sheet in half three times until it forms a 15cm x 11cm rectangle. Lay a piece of Turkish Delight along the longest edge of the pastry. Fold the edges in and roll to create a cigar shape. Transfer to a tray and brush with butter. Repeat with the rest of the ingredients.
  • Bake rolls until golden brown, about 12 to 15 minutes. Remove from oven and allow to cool.
  • Combine water, rosewater (if using), and sugar in a small saucepan. Stir over low heat until sugar dissolves. Bring to a boil without stirring. Reduce heat and simmer for 4 minutes until slightly thickened.
  • Drizzle syrup over filo rolls and sprinkle with pistachios before serving.
