Turkish delight filo fingers

Indulge in crispy filo cigars bursting with Mediterranean flavors.
Ingredients:
  • 60ml honey
  • 60ml water
  • 60ml rosewater
  • 100g walnut
  • 140g pistachio
  • 300g Turkish delight, finely chopped
  • 2.50 gm ground cinnamon
  • 100g butter, melted
  • 12 sheets filo pastry, halved lengthways
Instructions:
  • In a small saucepan over low heat, mix honey, sugar, and water. Stir for 2 minutes until sugar dissolves. Increase heat to high and boil for 2-3 minutes until the syrup slightly thickens. Remove from heat and stir in the rosewater. Set aside.
  • In a medium bowl, mix together walnuts, pistachios, Turkish delight, cinnamon, and half of the rosewater syrup.
  • Preheat the oven to 180°C. Lay out the filo sheets on a clean work surface and cover with a damp tea towel to keep them moist. Brush a sheet of filo with melted butter, then add 1 tablespoon of nut mixture at one end. Fold the sides and roll up to seal the filling. Transfer to a baking tray and repeat the process with the rest of the filo, butter, and nuts.
  • Once perfectly golden brown, take out the baked dish from the oven. Drizzle the remaining syrup over it while it's still warm. Let it cool on a wire rack. Plate and serve on a decorative platter.
