Middle-Eastern baklava

Irresistible baklava: flaky filo with sweet Turkish delight filling.
Ingredients:
  • 500g good-quality Turkish delight*
  • 50g almond meal
  • 200g walnuts, finely chopped
  • 2 tsp rosewater
  • 21.00 gm lemon juice
  • 215.00 gm caster sugar
  • 9 sheets filo pastry
  • 100g butter, melted
  • Rose petals, to garnish
  • Turkish coffee, to serve
Instructions:
  • Preheat oven to 190°C.
  • Dice the Turkish delight into small cubes and combine them in a bowl with the icing sugar, almond meal, walnuts, half of the rosewater, lemon juice, and half of the caster sugar. Mix well and let it sit.
  • Combine the remaining caster sugar and 1 cup water in a saucepan over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer for 5 minutes. Mix in the remainder of the rosewater and let it cool.
  • Lay 1 sheet of filo on a work surface and generously brush with melted butter. Repeat with 2 more sheets. Spread a third of the filling along one long edge of the buttered pastry, then tightly roll up, twisting the ends to seal. Brush the top with more butter. Repeat the process with the remaining filo and filling to create a total of 3 delicious rolls.
  • Place on a baking tray lined with parchment paper and bake for 30 minutes until golden brown. Drizzle with a touch of syrup and allow to cool to perfection.
  • After cooling, slice the dish diagonally and generously drizzle with the extra syrup. Sprinkle with fragrant rose petals and enjoy alongside a cup of invigorating Turkish coffee.
