Make flavorful lamb sausage rolls with lean mince and aromatic spices for a delectable treat.
Ingredients:
  • 500g lean lamb mince
  • 1 tsp ground cumin seeds
  • 0.63 gm ground nutmeg
  • 0.63 gm ground cinnamon
  • 1/2 tsp chilli flakes
  • 2.50 gm sweet paprika
  • 1/2 tsp ground coriander
  • 1 tsp dried mint
  • 1 tsp dried oregano
  • 2 sheets frozen puff pastry, thawed
  • 1 egg yolk
  • 1/2 tsp sumac
  • Pomegranate molasses, to drizzle (see note)
  • 2 preserved lemon quarters, white pith removed, rind finely chopped (see note)
  • Seeds of 1 pomegranate
  • 4 tomatoes, seeds removed, thinly sliced
  • 500.00 ml mint leaves
  • 500.00 ml flat-leaf parsley leaves
  • 36.40 gm extra virgin olive oil
  • 120g soft goat's cheese
Instructions:
  • Preheat the oven to 200°C for the perfect cooking temperature.
  • Mix lamb, garlic, spices, and herbs in a bowl and season. Press pastry sheets together to create a long sheet, then cut in half lengthwise. Spread the filling along one side of the pastry. Roll up to form a log, moisten the pastry edge with water, and press to seal. Brush with egg, sprinkle with sumac, and place on a baking tray seam-side down. Bake for 20-25 minutes until golden brown.
  • Combine all salad ingredients in a bowl and set aside.
  • Drizzle molasses generously over sausage rolls, slice, and serve alongside a fresh salad.
