Ingredients:
  • 8 chicken legs
  • 400g basmati rice
  • 2 garlic cloves, crushed
  • 20.00 ml grated ginger
  • 20.00 ml ground coriander
  • 2 tsp ground turmeric
  • 1 tsp ground chilli powder
  • 1L (4 cups) chicken style liquid stock
  • 125.00 ml chopped coriander
  • 3 tomatoes, chopped
  • Tzatziki, to serve
Instructions:
  • Preheat the oven to 180°C. In a frying pan over medium heat, heat 1 tablespoon of olive oil. Add 8 chicken legs and cook until golden. Remove the chicken legs and sauté 1 chopped onion in the same pan.
  • Mix 2 cups (400g) basmati rice with crushed garlic, grated ginger, ground coriander, ground turmeric, and ground chilli powder. Place the mixture in a 4 litre ovenproof dish. Place chicken on top and pour 1L (4 cups) chicken stock over it.
  • After baking for 40 minutes, break apart the cooked chicken, then mix in 1/2 cup of chopped coriander and 3 chopped tomatoes with the rice. Serve alongside tzatziki for a flavorful meal.
