Filipino dessert: Crispy sugary egg rolls with warm plantains. Quick and easy to make!
Ingredients:
  • 1 cup white sugar
  • 0.25 cup water
  • 20 spring roll wrappers
  • 5 plantains, peeled and quartered
  • 0.33333334326744 cup brown sugar
  • 1.5 cups vegetable oil
Instructions:
  • Place the sugar and water in individual bowls. Separate the spring roll wrappers and stack them. Peel the plantains, and cut each in half lengthwise, then halve each piece once more.
  • Lay a wrapper on a clean surface with a corner pointing towards you. Coat a plantain piece in sugar and place it 1 inch from the bottom corner. Fold the bottom corner over the plantain and roll halfway. Fold in the side corners, then continue rolling towards the top. Dampen the top corner with wet fingers and finish rolling. Repeat with the rest of the wrappers.
  • Preheat oil to 350 degrees F (175 degrees C. Fry egg rolls until golden brown on one side for 2 to 3 minutes. Flip and sprinkle with brown sugar. Continue frying for an additional 2 to 3 minutes until golden. Transfer to a plate.
