Upgrade your dessert game with a fun and crispy version of turon - caramelized bananas wrapped in lumpia wrappers and fried to perfection.
Ingredients:
  • 1 tablespoon butter
  • 1 banana, halved lengthwise
  • 0.25 cup brown sugar
  • 1 dash ground cinnamon
  • 1 tablespoon water
  • 1 tablespoon all-purpose flour
  • 1 tablespoon white sugar
  • 0.25 teaspoon ground cinnamon
  • 5 lumpia wrappers, cut into thirds, or more as needed
  • vegetable oil for frying
Instructions:
  • In a skillet over medium-high heat, melt butter until sizzling. Add brown sugar and a dash of cinnamon, stirring until bubbles form. Introduce banana and cook for about 5 minutes until lightly browned, stirring gently. Transfer banana to a bowl, then roughly slice into 1/4-inch chunks with a spoon. Allow filling to cool slightly before using.
  • Combine water and flour in a small bowl to create a smooth paste. In a separate small bowl, mix white sugar and 1/4 teaspoon of cinnamon.
  • Place a lumpia strip on a flat work surface. Spoon 3/4 to 1 teaspoon of filling onto the lower corner of the wrapper. Fold one corner over the filling to create a triangle shape. Fold over the remaining edges to complete the triangle, using a bit of paste to seal the final fold. Arrange the triangle on a plate with the seam-side facing down. Repeat these steps with the rest of the wrappers, filling, and paste.
  • In a skillet, heat 2 inches of oil over medium-high heat. Fry the triangles in batches until golden brown, about 4 minutes each. Drain on a paper towel and dust with cinnamon sugar while warm.
