Tuscan butter potatoes recipe

Golden buttery Italian herb potatoes with oregano, basil, parsley, garlic, and red capsicum.
Ingredients:
  • 1.5kg baby desiree potatoes, quartered
  • 30g butter, melted
  • 20.00 ml Italian herb mix
  • 6 garlic cloves, crushed
  • 80g (1/2 cup) sun-dried tomato strips, drained, finely chopped
  • 60g baby spinach leaves, coarsely chopped
  • 125.00 ml small fresh continental parsley leaves
  • Sea salt flakes
Instructions:
  • Preheat your oven to 220C/200C fan forced and prepare a large baking tray by lining it with baking paper.
  • Spread a layer of potato, oil, butter, herb mix, and garlic on the prepared tray. Sprinkle with pepper. Mix well to ensure everything is coated. Roast in the oven for 40 minutes.
  • Place the tomato on the tray and continue roasting for an additional 10 minutes until the potato is golden and tender. Then, sprinkle in the spinach leaves and parsley, and mix everything together gently.
  • Garnish with a pinch of salt before serving.
