Tuscan Tomato Soup

Savor a quick and tasty Tuscan tomato soup garnished with fresh basil in just an hour!
Ingredients:
  • 2 tablespoons butter or margarine
  • 1 medium onion, finely chopped (1/2 cup)
  • 2 medium carrots, finely chopped (1/2 cup)
  • 1 cup shredded cooked chicken
  • 1/4 cup chopped fresh basil leaves
  • 2 tablespoons sugar
  • 10 large tomatoes, peeled and coarsely chopped (10 cups)
  • 1 can (8 ounces) tomato sauce
  • Sliced fresh basil leaves, if desired
Instructions:
  • In a Dutch oven over medium-high heat, melt butter until sizzling. Sauté onion and carrots in the butter for about 5 minutes, stirring occasionally, until the carrot is tender.
  • Mix in the chicken, 1/4 cup of fresh basil, sugar, salt, tomatoes, and tomato sauce. Bring to a boil, then simmer on low heat for 20-25 minutes until flavors meld together. Serve with a sprinkle of basil on top.
