Twice-cooked beans with pork and XO sauce

Whip up quick gourmet Chinese dish - double-cooked green beans and pork with XO sauce.
Ingredients:
  • 21.00 gm light soy sauce
  • 5.30 gm soy sauce
  • 20.00 ml Chinese rice wine (see notes)
  • 5.00 gm caster sugar
  • 2.50 gm cornflour
  • 150g pork mince
  • 250g green beans, trimmed
  • 36.40 gm peanut oil
  • 2 garlic cloves, finely chopped
  • 1 long red chilli, seeds removed, finely chopped
  • 2 tsp XO sauce (see notes), plus extra to serve
Instructions:
  • Marinate pork in a flavorful mixture of soy sauces, rice wine, sugar, and cornflour for 15 minutes.
  • Quickly cook beans in boiling salted water, then drain and thoroughly dry before frying.
  • In a hot wok, sizzle the beans in oil for 2-3 minutes until crisp-tender. Drain on paper towel before serving.
  • Stir-fry garlic and chili in the wok for 30 seconds over high heat until fragrant. Stir in the pork mixture and cook for 3-4 minutes until done. Mix in the XO sauce until well combined.
  • Garnish the beans with the pork and additional XO sauce before serving.
