Quick and tasty ham and cheese egg frittatas on the go, ready in just 25 minutes!
Ingredients:
  • 12 thin slices (2/3 oz each) cooked ham (from deli)
  • 12 large LAND O LAKES® All-Natural Farm-Fresh Eggs
  • 2 tablespoons grated Parmesan cheese
  • 2/3 cup shredded Colby-Monterey Jack cheese blend
  • 2/3 cup grape tomatoes, chopped
  • Pinch Italian seasoning
  • Salt and pepper to taste
Instructions:
  • Preheat oven to 350°F. Grease 12 regular-size muffin cups with cooking spray and gently line each cup with a slice of ham (adjust to fit the cup if needed).
  • In a medium bowl, whisk eggs until thoroughly combined. Stir in all remaining ingredients until evenly mixed.
  • Evenly distribute the egg mixture into the muffin cups and bake for approximately 20 minutes, or until the centers are set.
