Two-cheese & tomato pie

Cheesy and easy dinner pie.
Ingredients:
  • 3 eggs, lightly whisked
  • 250ml (1 cup) milk
  • 80g (1 cup) coarsely grated cheddar
  • 140g (1 cup) pastry mix
  • 1 bunch spring onions (globe onions), trimmed, thinly sliced
  • 3 bacon rashers, rind removed, coarsely chopped
  • 20.00 ml shredded parmesan
  • 1 tomato, thinly sliced
Instructions:
  • Preheat your oven to 180°C and prepare a round 18cm cake pan by lining it with non-stick baking paper.
  • Mix together the eggs, milk, cheddar cheese, pastry mix, onion, bacon, and parmesan in a bowl. Pour the mixture into the prepared pan and top with the sliced tomatoes.
  • Bake until lightly golden and set, about 40 minutes.
