Whip up a quick and tasty spicy beef mince tacos dinner for two in no time!
Ingredients:
  • 9.20 gm olive oil
  • 1/2 medium brown onion, finely chopped
  • 2.50 gm ground cumin
  • 1 tsp ground coriander
  • 1.25 gm paprika
  • Pinch ground cayenne pepper
  • 250g beef mince
  • 1/2 x 400g can crushed tomatoes
  • 4 jumbo taco shells
  • 2 iceberg lettuce leaves, shredded
  • 1 medium tomato, chopped
  • 187.50 ml grated tasty cheese
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced).
  • In a large frying pan over medium-high heat, heat oil. Add onion and cook, stirring, until softened, about 3 minutes. Stir in cumin, coriander, paprika, and cayenne pepper and cook for about 30 seconds until fragrant. Add mince and cook for 8 minutes, breaking it up with a wooden spoon, until browned. Then add crushed tomato and cook for 5 minutes until the sauce thickens, stirring occasionally.
  • Heat the taco shells according to the package instructions. Fill each taco shell with the beef mixture and salad. Top with lettuce, chopped tomato, and cheese. Serve and enjoy!
