Japanese-inspired healthy beef tacos, ready in just 17 minutes for a delicious twist on Taco Tuesday. Ideal for busy weeknights.
Ingredients:
  • 10g dried shiitake mushrooms
  • 500g beef stir-fry strips
  • 40.00 ml teriyaki sauce or marinade
  • 2 tsp wasabi paste
  • 1/2 small daikon, shredded
  • 1 large carrot, shredded
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 3 tsp mirin
  • 8 large butter lettuce leaves
  • Nori strips, to serve
  • Toasted sesame seeds, to serve
  • Sliced red chilli, to serve
Instructions:
  • Place mushrooms in a bowl and cover with boiling water. Let soften for 5 minutes. In a large bowl, mix beef, teriyaki sauce, and wasabi paste thoroughly.
  • Prepare a spacious non-stick frying pan with a light coating of oil. Heat over medium-high heat. Cook the beef in batches, continuously stirring for 1-2 minutes until it is perfectly cooked through.
  • After draining the mushrooms and removing excess moisture, roughly chop or slice them. Then, add the mushrooms to the beef and cook together for 1 minute.
  • In a bowl, mix daikon, carrot, and cucumber. Drizzle with mirin, toss gently, and season to taste. Arrange two lettuce leaves on each plate, top with salad, and beef. Garnish with nori strips, sesame seeds, and sliced chili before serving.
