Savory shepherd's pie with lean ground beef topped with creamy mashed potatoes.
Ingredients:
  • 1.25 pounds red potatoes, cut into chunks
  • 3 large cloves garlic
  • 1 pound extra-lean ground beef
  • 2 tablespoons flour
  • 4 cups frozen mixed vegetables (carrots, corn, green beans, peas), thawed
  • 0.75 cup fat-free reduced-sodium beef broth
  • 2 tablespoons ketchup
  • 0.75 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
  • 0.5 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
Instructions:
  • Boil potatoes and garlic in a large saucepan until potatoes are tender, about 20 minutes. In the meantime, brown the meat in a large nonstick skillet. Stir in flour and cook for 1 minute. Add mixed vegetables, broth, and ketchup. Cook for 5 minutes, stirring frequently.
  • Preheat the oven to 375 degrees F. Drain the potatoes and return them to the pan. Mash until smooth and well blended with sour cream. Gently stir in 1/4 cup of cheese.
  • Transfer the flavorful meat mixture into a cozy 8-inch square baking dish, then generously layer with comforting potatoes.
  • Bake for 18 minutes until golden brown, then sprinkle with the remaining cheese and bake for an additional 2 minutes until the cheese is perfectly melted.
