Elevate traditional potato salad with creamy sour cream and tangy red wine vinegar.
Ingredients:
  • 8 red potatoes
  • 1.5 cups mayonnaise (such as Hellmann's®/Best Foods®)
  • 0.66666668653488 cup sour cream
  • 3 tablespoons red wine vinegar
  • 3 tablespoons white sugar
  • 2 teaspoons dried minced onion
  • 1 teaspoon celery seed
  • 4 hard-cooked eggs, chopped
  • salt and ground black pepper to taste
Instructions:
  • In a large pot, simmer potatoes in salted water until tender, about 20 minutes. Drain and cube.
  • Place the potatoes in a spacious bowl, then gently combine with mayonnaise, sour cream, vinegar, sugar, onion, and celery seed until fully coated. Gently fold in the eggs and season with salt and black pepper. Chill in the refrigerator until cold.
