An elevated childhood favorite: Bubble & Squeak - sizzling leftovers transformed into a mouthwatering stack of crispy, vegetable-packed perfection.
Ingredients:
  • olive oil
  • 25 g unsalted butter
  • 4 sprigs of fresh woody herbs such as rosemary, sage, thyme
  • 600 g leftover roast potatoes
  • 600 g leftover cooked veg such as carrots, swede, turnips, parsnips, Brussels sprouts, kale
  • leftover vac-packed chestnuts optional
Instructions:
  • Heat a 28cm non-stick frying pan over medium heat with 1 tablespoon of oil and butter (or leftover dripping). Add fresh herb leaves to crisp up for a minute. Add potatoes, vegetables, and chestnuts without chopping. Mash everything with a potato masher into an even layer. Season with sea salt and black pepper, cook for 3 to 4 minutes until a golden crust forms. Fold crispy bits back into the mash using a fish slice, then flatten down. Repeat this process for about 20 minutes until golden, crispy, and delicious. Adjust seasoning halfway through. Serve immediately or keep warm on low heat to enhance the flavor. Enjoy with your choice of sides like fried eggs, lemon-dressed watercress, Piccalilli, or leftover cooked ham slices.
