Revamp the classic Aussie meat pie into a fun, whimsical dish.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 brown onion, chopped
  • 1 sebago potato, peeled, cut into 1cm pieces
  • 1 carrot, cut into 1cm pieces
  • 1 zucchini, quartered lengthways, sliced
  • 600g beef mince
  • 40.00 ml instant gravy powder
  • 48.80 gm Worcestershire sauce
  • 400g can diced tomatoes
  • 2 tsp chopped fresh rosemary leaves
  • 40.00 ml chopped fresh flat-leaf parsley leaves, plus extra to serve
  • Olive oil cooking spray
  • 125.00 ml grated cheddar
  • 300.00 gm self-raising flour
  • 75g butter, melted
  • 1 green onion, chopped
Instructions:
  • In a large frying pan over medium-high heat, heat oil. Add onion, potato, carrot, and zucchini, cooking and stirring for 5 minutes until onion softens. Add garlic and cook for 1 minute until fragrant. Then add mince and cook for 5 minutes, breaking it up with a wooden spoon, until browned.
  • Sprinkle in gravy powder and Worcestershire sauce, stirring until well mixed. Toss in tomatoes and rosemary, season generously with pepper. Bring to a boil, then lower heat and simmer for 10 minutes, stirring occasionally. Finally, mix in fresh parsley.
  • Preheat the oven to 200C/180C fan-forced.
  • Create delicious damper by placing flour in a bowl and forming a well. Add butter, milk, and onion, then season with salt and pepper. Mix thoroughly, then transfer the dough onto a floured surface and press out into a 23cm round shape.
  • Transfer the mince mixture into a 6cm-deep, 22cm round cake pan. Place the damper on top, tucking in the edges. Spray with oil and sprinkle with cheddar. Bake for 20-25 minutes until the damper is golden brown and firm. Let it sit for 5 minutes, then carefully flip onto serving plates with the damper-side down. Garnish with extra parsley and serve.
