Delicious Linzer cookies made with almond flour and sweet raspberry filling.
Ingredients:
  • 3/4 cups butter (1 1/2 sticks), room temperature
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 1 1/2 cups finely ground blanched almonds or hazelnuts
  • 2 1/4 cups cake flour (can sub all purpose flour)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 6 ounces raspberry jam, or other red preserve (I used quince jelly)
  • Powdered sugar
Instructions:
  • In a standing electric mixer, beat the butter until fluffy. Add sugar and continue beating. Mix in the egg, lemon zest, and vanilla extract.
  • Prepare the dough by combining the flour, ground nuts, baking powder, and cinnamon. Gradually add this mixture to the butter, sugar, and egg mixture, beating well after each addition.
  • Chill the dough: Shape it into disks, wrap tightly in plastic, and refrigerate for 1 hour.
  • Flatten dough to 1/8-inch thickness between parchment paper and chill in the freezer for 5-10 minutes before cutting.
  • Heat your oven to 350°F.
  • Cut out the base cookie shapes. Use a smaller cookie cutter to create the centers for half of the cookies. Re-roll any scraps and continue cutting out shapes.
  • Bake at 350°F for 12 minutes, or until edges are golden. Allow to cool on a wire rack.
  • Warm up the jam or jelly, then spread it over the solid disks. Place another cookie on top and gently press down.
  • Dust with powdered sugar and spoon additional preserves into the holes. Allow to set briefly before serving.
