Spooky mini cheesecakes for a hauntingly delicious Halloween treat!
Ingredients:
  • 1 cup graham cracker crumbs
  • 3/4 cup sugar
  • 1/3 cup butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 2 teaspoons vanilla
  • 1 teaspoon grated lemon peel
  • 3 eggs
  • 1/4 cup raspberry preserves
Instructions:
  • Preheat oven to 350°F and line 16 muffin cups with paper baking cups. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a small bowl. Press 1 tablespoon of the mixture firmly into the bottom of each muffin cup to create the crust.
  • In a large bowl, use an electric mixer to blend cream cheese and the remaining 1/2 cup of sugar until creamy. Mix in vanilla, lemon peel, and eggs until smooth. Spread the filling evenly over the crusts.
  • Bake for 20 to 25 minutes until set, then transfer from pans to cooling racks and cool for 30 minutes.
  • Poke 2 holes on top of each cheesecake using a straw. Fill a small resealable plastic bag with preserves, seal the bag, then cut off the corner to pipe preserves into the holes and create fang marks on top of the cheesecakes. Chill in the refrigerator for 1 hour and store covered in the fridge.
