Vanilla & tea poached fruit

Ingredients:
  • Boiling water
  • 1 x 500g pkt dried fruit medley (Angas Park brand)
  • 1L (4 cups) boiling water, extra
  • 3 English breakfast tea bags
  • 400g (2 cups) raw caster sugar
  • 1 vanilla bean, split (Queen Fine Foods brand)
  • 1 x 7cm-long cinnamon stick
  • Thick natural yoghurt, to serve
Instructions:
  • Place the dried fruit in a heatproof bowl and cover it with boiling water. Let it soak for 20 minutes or until soft. Drain and set aside.
  • Combine the additional water and tea bags in a heatproof jug. Allow to sit for 10 minutes to infuse, then discard the tea bags.
  • Pour the brewed tea into a sturdy saucepan. Combine sugar, a vanilla bean, and a cinnamon stick. Stir over medium heat for 2 minutes until the sugar dissolves. Bring to a boil, then add the fruit and lower the heat to a simmer for 30 minutes until fruit is soft. Let it cool for 15 minutes, then cover loosely with plastic wrap. Chill in the fridge for 1 hour before serving.
  • Before serving, gently take out the bean and cinnamon stick. Then, divide the fruit into bowls and top each with a dollop of yogurt.
