Create a delicious batch of classic buttermilk scones to delight Mom on her special day.
Ingredients:
  • 450.00 gm self-raising flour
  • 53.75 gm caster sugar
  • 75g butter, chopped
  • 1 vanilla bean, halved lengthways
  • 345.80 gm buttermilk
  • Raspberry jam, to serve
  • Double cream, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and generously grease a 19cm square cake pan.
  • In a large bowl, sift the flour and sugar together. Use your fingertips to rub the butter into the flour until it looks like breadcrumbs. Create a well in the center.
  • Extract vanilla seeds from the center of each vanilla bean half, discarding the pod. Combine buttermilk and vanilla seeds in a jug, then mix well. Add this mixture to the flour mixture, using a butter knife to mix until a soft dough forms. If needed, incorporate more buttermilk. Transfer the dough to a lightly floured surface and knead gently until smooth (avoid over-kneading to prevent tough scones).
  • Shape dough into a 3cm-thick round and cut out 16 rounds using a 5cm round cutter. Arrange the scones close together on a pan. Bake for 15 to 20 minutes until golden and they sound hollow. Cool on a wire rack, then enjoy warm with jam and cream.
