Vanilla Cupcakes

Delicious and simple vanilla cupcakes, perfect with or without vanilla buttercream frosting.
Ingredients:
  • 1.5 cups self-rising flour
  • 1.25 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2 cups white sugar
  • 1 cup milk
  • 0.5 cup unsalted butter
  • 4 cups confectioners' sugar
  • 0.25 cup milk
Instructions:
  • Heat the oven to 350 degrees F (175 degrees C) and prepare two 12-cup muffin tins with paper liners.
  • Mix self-rising and all-purpose flours in a bowl.
  • In a large bowl, use an electric mixer to cream the butter until smooth. Slowly add sugar and beat until fluffy for about 3 minutes. Incorporate eggs one at a time, beating well after each. Add flour in 3 parts, alternating with milk and vanilla, and briefly beat after each addition. Fill cupcake liners about 3/4 full with batter.
  • Bake in the preheated oven for about 20 minutes until the tops spring back. Let them cool in the tins for 10 minutes before transferring to a wire rack to cool completely.
  • Cream the butter in a large bowl using an electric mixer until smooth. Add half of the confectioners sugar, followed by the milk and vanilla. Beat for 3 to 5 minutes until smooth and creamy. Gradually incorporate the remaining confectioners sugar until the icing reaches a spreadable consistency.
  • Frost the cooled cupcakes with icing.
