Vanilla cupcakes filled with sugar-free pudding, topped with whipped cream and decorated with fresh blueberries and strawberries for a patriotic cold treat.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1.5 cups white sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup vegetable shortening
  • 3 egg whites
  • 2 teaspoons vanilla extract
  • 1 cup milk
  • 1 (1 ounce) package instant sugar-free vanilla pudding mix
  • 2 cups skim milk
  • 1 (7 ounce) container light whipped cream
  • 12 thinly sliced strawberries, or as needed
  • 24 fresh blueberries
Instructions:
  • Begin by preheating your oven to 350 degrees F (175 degrees C). Next, prepare 24 cupcake cups with paper liners. Then, in a large mixing bowl, combine the flour, sugar, baking powder, and salt by whisking them together.
  • Use a pastry cutter to blend the shortening into the dry ingredients until the mixture is crumbly. Add egg whites, vanilla extract, and 1 cup of milk, mixing until smooth. Fill paper-lined cupcake cups 2/3 full with batter.
  • Bake in the preheated oven for 22 to 26 minutes or until a toothpick inserted in the center comes out clean. Let cupcakes cool completely.
  • Combine the pudding mix and 2 cups of skim milk in a bowl, beating until thickened, approximately 2 minutes. Let it sit for 5 minutes to set further. Transfer the thickened pudding into a pastry bag fitted with a medium tip.
  • For filling and decorating cupcakes, carefully hollow out the center of each cupcake using a small paring knife, making a 1/2 inch wide and 3/4 inch deep hole. Fill the cavity with pudding using a pastry bag until level with the top. Finish by frosting the filled cupcakes with a light layer of whipped cream, ensuring a smooth finish.
  • Garnish each cupcake by gently nestling a fresh blueberry in the center, then elegantly fan out 5 slices of strawberry around it to create a stunning star shape. Chill in the refrigerator until ready to serve.
