Vanilla freezer biscuits

Freezeable biscuit recipe for anytime cravings!
Ingredients:
  • 1 vanilla bean, halved lengthways
  • 250g butter, softened
  • 215.00 gm caster sugar
  • 1 egg
  • 625.00 ml plain flour
  • icing sugar mixture, to serve
Instructions:
  • Remove the seeds from the vanilla bean, discarding the bean. Use an electric mixer to beat together the butter, sugar, and vanilla seeds until light and creamy. Add the egg and beat until well combined. Sift the flour over the butter mixture, then stir with a wooden spoon until completely combined.
  • Transfer the dough onto a surface lightly dusted with flour. Split it in half. Mold each half into a 30cm log using your hands. Wrap each log in baking paper and freeze for 2 hours, or until solid.
  • Heat your oven to 180°C for a standard oven or 160°C for a fan-forced oven. Prepare 2 baking trays by lining them with baking paper.
  • Let logs thaw for 15 minutes before cutting into 1.5cm-thick rounds. Arrange rounds 3cm apart on baking trays. Bake for 12 to 14 minutes until golden. Cool on trays for 5 minutes, then transfer to wire rack to cool. Serve dusted with icing sugar.
