Vanilla chocolate star cookies are the ideal pairing for our creamy white chocolate eggnog.
Ingredients:
  • Olive oil, to grease
  • 60ml (1/4 cup) water
  • 6.00 gm gelatine powder
  • 1/2 vanilla bean, split lengthways
  • 70g (1/3 cup) caster sugar
  • Cornflour, to dust (see note)
Instructions:
  • Grease a baking tray with oil and line with non-stick baking paper. In a small saucepan, place water, sprinkle gelatine over it, and set aside for 1 minute to soften.
  • Scrape the fragrant vanilla seeds into the pan, then add the sugar. Heat on low, stirring until the gelatin and sugar dissolve completely.
  • Move the mixture into a spacious bowl. Use an electric beater to whip for 10 minutes until it becomes thick, light, and fluffy. Spread evenly onto the prepared tray to create a 2cm-thick, 16cm square layer. Ensure the surface is smooth. Let it sit for 1 hour until completely set.
  • Sprinkle cornflour on a non-stick baking sheet. Gently transfer the marshmallow onto the cornflour. Peel off the top sheet. Dust the marshmallow with cornflour. Cut out 16 stars using a 3.5cm star-shaped pastry cutter coated in cornflour.
