Indulge in easy-to-make Italian custard cups finished with honey and raspberries for a divine dessert experience.
Ingredients:
  • 1 teaspoon unflavored gelatin
  • 1 tablespoon cold water
  • 2/3 cup whipping cream
  • 2/3 cup milk
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla
  • 1 1/3 cups fresh raspberries
  • 2 tablespoons honey
  • Fresh mint sprigs
Instructions:
  • In a small bowl, gently sprinkle gelatin over cold water and allow it to soften.
  • In a 2-quart heavy saucepan, gently heat whipping cream, milk, sugar, and vanilla over medium heat until simmering, stirring occasionally until sugar dissolves. Take off heat, then whisk in softened gelatin until fully dissolved. Allow it to cool to room temperature, approximately 15 minutes.
  • Put 2 raspberries at the bottom of each of 8 shot glasses. Pour cream mixture evenly into glasses. Chill in the refrigerator until set, approximately 2 hours.
  • Before serving, generously adorn each exquisite panna cotta with the luscious leftover raspberries and a delicate drizzle of 3/4 teaspoon of honey. Finish with a fresh sprig of mint for a touch of elegance.
