Veal & mushroom marsala

Succulent veal in a cozy mushroom marsala dish, ideal for chilly evenings.
Ingredients:
  • 270g brown rice
  • 5.00 gm cornflour
  • 150ml light & creamy evaporated milk
  • 13.80 gm olive oil
  • 400g veal stir-fry strips
  • 1 brown onion, cut into wedges
  • 1 bunch broccolini, cut into 4cm lengths
  • 200g Swiss brown mushrooms, sliced
  • 4cm piece fresh ginger, grated
  • 80ml marsala
Instructions:
  • Boil the rice in a large saucepan according to package directions until tender. Mix cornflour with a bit of milk until smooth, then add the rest of the milk and stir well.
  • In a large wok over high heat, heat 2 teaspoons of oil. Cook half of the veal for 1-2 minutes until just cooked. Remove from the wok and repeat with the remaining veal.
  • In a hot wok, stir-fry onion, broccolini, mushrooms, garlic, and ginger in the remaining oil for 2 minutes. Pour in Marsala and cook for 1 more minute. Add the milk mixture and stir until it thickens. Add back the meat, mix to coat, and serve the veal marsala with rice.
