Veal and sage burgers

Get the kids involved in making delicious veal and sage burgers with homemade coleslaw for a fun kitchen activity.
Ingredients:
  • 600g veal mince
  • 1 egg, lightly whisked
  • 20.00 ml coarsely chopped fresh sage
  • 25g (1/4 cup) dried (packaged) breadcrumbs
  • 1/4 red cabbage, hard core removed, finely shredded
  • 1/4 green cabbage, hard core removed, finely shredded
  • 1 large carrot, peeled, coarsely grated
  • 40.00 ml chopped fresh chives
  • 190g (3/4 cup) reduced-fat egg mayonnaise
  • 4 wholegrain bread rolls, split, toasted, buttered
  • Tomato sauce, to serve
Instructions:
  • In a large bowl, mix veal mince, egg, sage, and breadcrumbs using your hands until fully combined. Divide the mixture into 4 equal parts and shape them into 9cm patties.
  • In a non-stick frying pan over medium-high heat, sear patties until golden brown on each side. This should take about 4-5 minutes per side, or until fully cooked.
  • In a large bowl, toss together cabbage, carrot, chives, and mayonnaise until well combined.
  • On each plate, stack a bread-roll half, followed by coleslaw and veal patties. Drizzle with tomato sauce and add the remaining bread-roll halves on top. Serve right away.
