Succulent crumbed veal on a creamy potato mash.
Ingredients:
  • 2 (200g each) veal schnitzel
  • 45g (1/2 cup) dried (packaged) breadcrumbs
  • 60g (1/3 cup) polenta (cornmeal)
  • 40.00 ml chopped fresh continental parsley
  • 75g (1/2 cup) plain flour
  • 1 egg
  • 1 egg white
  • Olive oil spray
  • 1.2kg coliban potatoes, peeled, coarsely chopped
  • Lemon wedges, to serve
  • 1/2 Minicab baby red cabbage, hard core removed, finely shredded
  • 1 large carrot, peeled, coarsely grated
  • 2 celery sticks, trimmed, thinly sliced
  • 65g (1/4 cup) Sour Cream
  • 60ml (1/4 cup) fresh lemon juice
  • 5.90 gm Dijon mustard
  • 1 garlic clove, crushed
Instructions:
  • In a bowl, mix cabbage, carrot, and celery. In a separate small bowl, whisk together sour cream, lemon juice, mustard, and garlic. Season with salt and pepper.
  • Preheat your oven to 200°C. Line a large baking tray with non-stick baking paper. Place the veal between two sheets of plastic wrap and gently flatten to 5mm thickness using a meat mallet or rolling pin.
  • Mix breadcrumbs, polenta, and parsley on a plate. Season flour with salt and pepper on a separate plate. Combine egg and egg white in a shallow bowl.
  • Coat the veal in flour, then dip in egg and bread crumbs, pressing firmly to coat. Place on a lined tray, spray with olive oil, and bake for 10 minutes. Turn, spray with more olive oil, and bake until light golden, about 10 minutes more.
  • Place the potato in a large saucepan and cover with cold water. Boil over high heat for 15 minutes until tender. Drain, saving 125ml (1/2 cup) of cooking liquid. Return the potato to the pan over medium heat, stir until floury and any moisture evaporates. Remove from heat, mash until smooth. Over medium heat, add the reserved liquid gradually, mashing until creamy. Season with salt and pepper to taste.
  • Spoon the coleslaw onto each serving plate and generously drizzle with the dressing. Accompany with mashed potatoes, veal, and lemon wedges.
