Family-friendly veal schnitzel with crispy breadcrumbs.
Ingredients:
  • 600g veal steak
  • 82.50 ml plain flour
  • 375.00 ml dried breadcrumbs
  • rice bran oil or extra-light olive oil, for shallow frying
  • Salad greens, to serve
  • Mashed potato, to serve
Instructions:
  • Sandwich the veal between plastic wrap and tenderize with a meat mallet until it reaches 5mm thickness.
  • *On a large plate, combine flour, salt, and pepper. *In a shallow bowl, lightly whisk eggs and 2 tablespoons of cold water. *Spread breadcrumbs on a separate plate. *Coat veal lightly in the flour mixture, then dip in the egg mixture, and finally coat with breadcrumbs, pressing gently to ensure they stick. *Place the schnitzels on a plate and refrigerate for 30 minutes.
  • - Preheat the oven to 140°C/120°C fan-forced and line a large baking tray with baking paper. - Cover the base of a large frying pan with oil and heat over medium-high heat. Cook 2 schnitzels for 2 to 3 minutes on each side until golden, then drain on paper towel. Keep warm in the oven on the prepared tray. Repeat with remaining schnitzels. - Serve the schnitzels with lemon wedges, salad greens, and mash.
