Ingredients:
  • 8 small veal leg steaks
  • olive oil cooking spray
  • 50g baby spinach
  • 3 large Roma tomatoes, sliced
  • 250g mozzarella cheese, thinly sliced
  • crusty Italian-style bread, to serve
Instructions:
  • Preheat a non-stick pan over high heat. Lightly coat both sides of the veal with oil and season with salt and pepper. Sear each batch for 1 minute on each side until golden. Transfer to a plate.
  • Lower the heat to medium-low then add all veal back to the frying pan. Layer baby spinach, tomatoes, and mozzarella on top. Season with salt and pepper, cover, and cook for 5 minutes until the mozzarella has melted.
  • Enjoy this dish right away, accompanied by some warm, crusty bread.
